Smoked Chicken, Avocado & Grapefruit Salad

100g pack Capreolus smoked chicken
3 pink grapefruits
1 large ripe avocado
rocket leaves
Dressing:
Finely grated peel of one lemon
2 or 3 tbsp lemon juice
3 tbsp olive oil
pinch salt
freshly ground black pepper
3 tbsp cognac
2 tsp dijon mustard
Method:
The chicken is ready sliced in the pack, but I would suggest halving each piece. Peel the ruby grapefruit and cut into segments. Carefully peel the avocado and dice the flesh. Add this to the lemon juice for a few minutes while you make the dressing. Whisk all the dressing ingredients together, combine the avocado, grapefruit and rocket leaves carefully in a salad bowl top with the smoked chicken and dressing. Serve with a chilled white wine for added pleasure!
