Smoked Duck and Pear Starter

Ingredients:

100g pack Capreolus smoked duck

1 ripe pear (still firm, not over ripe)

1/2 tbsp honey

2 tbsp walnut oil

1/2 tsp good balsamic vinegar

small pinch chinese five spice powder (not too much as this can be rather pungent)

salt and pepper to taste



Method:

Put into a clean glass jar with a lid: walnut oil, honey, balsamic vinegar and chinese five spice powder. Firmly put on lid and shake to combine ingredients. Finely peel and slice the pear and lay out on small plates (I like to fan the pieces out). Top this with pieces of Capreolus smoked duck and drizzle the dressing from the jar over the dish. Serve with a glass of chilled rose wine.

Serves 4 as a starter
