The Dorset Air-dried Beef
If you like the Italian Bresaola then you are likely to enjoy this special recipe air dried beef made using the finest quality beef from West Country grass fed cattle. We have cured finely trimmed beef and then dried it until the texture is firm but supple and the colour is a deep rich red with a flavour to match. Try serving this with a drizzle of a fine extra virgin olive oil, squeeze of fresh lemon and a little black pepper.
