If you like Italian Bresaola then you are likely to enjoy our Dorset Air-Dried Beef, which is made using the finest quality beef from West Country grass fed cattle. We have cured finely trimmed beef and then dried it until the texture is firm but supple and the colour is a deep rich red with a flavour to match. Try serving this with a drizzle of a fine extra virgin olive oil, squeeze of fresh lemon and a little black pepper. Winner of a silver award in the 2011 Taste of the West Awards
